In his youth, before becoming one of Australia’s leading viticulturists, David Paxton worked briefly as a wool presser and learnt of the AAA wool classing stencil that reflects superior quality. So does this Wine! Made with 67% Shiraz from Gateway Vineyard, Jones Block and 19th vineyard. Quandong Farm and 19th Vineyard are the sources of the Grenache compounds. From carefully hand-tended bush vines. Harvested at optimum ripeness, the Shiraz fruit was then blended from five premium parcels, the Grenache from three for the remaining 33% of the blend. All fermented separately with careful monitoring, critical to achieving the desired complexity at final blending. Matured in 50% American and 50% French oak barriques – approximately 15% new oak, 85% 1, 2 year and older oak barrels – for 10 months prior to blending an bottling. A wine with lifted spice and red berry fragrance, with a palate of sweet berry fruit flavour filled with silky tannins. Smooth, even and balanced, will keep for up to 7 years. Great value for money, and a wine for red meats, game or just drinking for a relaxing comfortable time. International Wine Challenge Silver Medal winner
