South African wines are great levellers, they are a wake-up call halfway between European and New World counterparts. The sensible measures now being taken are planting higher up on hillsides in search of cooler climates, with a strong identification of terroir combining with a sensitive organic approach to winemaking in the better Estates. Oak is used sparingly to highlight, rather than obliterate the fruit.
